My favorite fish is fresh salmon backbone. My neighbor is a weekend commercial fisherman and he sells the whole cleaned fish for $3 a pound. He comes to my house and fillets it any way I like. My preferred way is lengthwise which yields two long fillets and the backbone. The backbone is the most fun to eat. You kind of scrape it off the bone with a fork and eat it with other finger foods like asparagus and very small potatoes.
